The Most Popular Korean Pork Dish: Quick Jeyuk-bokkeum

Hi everyone! Today, I’m excited to share a recipe for one of the most beloved everyday meals in Korea: Jeyuk-bokkeum (Korean Spicy Pork Stir-fry). 🥘

Many people think you need to marinate the meat for hours to get that deep flavor, but I’m here to tell you—you don’t have to wait! This is a “quick-and-easy” version inspired by Korea’s famous “Driver’s Diners” (Gisa-sikdang), where meals are served lightning-fast without sacrificing any of that smoky, savory taste.

If you’re looking for a delicious K-food recipe that you can whip up on a busy weeknight, this is the one. Let’s get cooking!

[Recipe] Quick & Easy Korean Spicy Pork

This recipe focuses on the cooking order to ensure the sauce coats the meat perfectly even without marination. I’ve adjusted the spiciness for my kids, but feel free to add more kick if you like it hot!

1. Ingredients

  • Main: 1 lb (500g) Sliced Pork (Pork Shoulder or Front Leg)
  • Pre-seasoning: 1 tbsp Minced Garlic, 1 tbsp Soy Sauce, a splash of Soju (or Rice Wine)
  • Vegetables: 1 Onion (sliced), 1/2 Carrot (sliced), Green Onions (sliced)
  • The Quick Sauce: * 3 tbsp Gochugaru (Korean Red Chili Flakes)
    • 2 tbsp Soy Sauce
    • 2 tbsp Allulose (or Sugar/Honey)
    • 1 tbsp Minced Garlic
    • 0.5 to 1.5 tbsp Gochujang (Korean Red Chili Paste)
    • (Tip: Use 0.5 tbsp for kids, or 1.5 tbsp for authentic spice!)
  • Garnish: Sesame seeds, Fresh Napa Cabbage for wrapping

2. Step-by-Step Instructions

  1. Quick Seasoning: In a bowl, mix the sliced pork with garlic, soy sauce, and soju. Let it sit for just 5 minutes while you prep the rest.
  2. Make the Sauce: Whisk together all the sauce ingredients in a small bowl until smooth. 🥣
  3. Stir-fry the Meat: Heat a pan with a little oil over medium-high heat. Add the pork and stir-fry until it’s about half-cooked.
  4. Add Vegetables: Toss in the onions, carrots, and green onions. Continue stir-frying with the meat.
  5. Add the Sauce: Pour in 2/3 of your prepared sauce. Stir-fry vigorously so the seasoning coats everything evenly. Taste and add the remaining sauce if you want more flavor. 🔥
  6. Finish: Once the meat is fully cooked and has a beautiful red glaze, turn off the heat and sprinkle with sesame seeds.

The Perfect Pairing: The secret to enjoying this like a local? Eat it with fresh, crunchy Napa Cabbage. I used the sweet cabbage my mother grew and sent from her farm. Wrapping the spicy pork in a crisp leaf creates a “heavenly collaboration” of flavors! 🥬😋
